These 7 Make-Ahead Marinades can be stored in airtight containers in the refrigerator for up to a week, or in the freezer for up to 3 months. 

Marinating Tips

  • Always marinate foods in the refrigerator.
  • Place the food to be marinated inside Ziploc extra large freezer bags. Pour in the marinade, press out the air, close bag securely and refrigerate for 24 to 48 hours.
  • The tougher and larger the cut of meat, the longer it will need to be marinated.
  • Precook spareribs in simmering water for 30 minutes before marinating to prevent ribs from drying out during cooking.
  • Cooked marinades, such as Japanese Teriyaki Marinade, can be reheated and brushed over food several times during cooking and at the end of cooking to glaze.
  • Don’t reuse marinades. Separate marinade in two. Use half to marinate raw meat and half to marinade during the cooking process.
  • Meats used in stews, such as Beef Bourguignon, can be marinated for 12 to 24 hours, then cooked in the marinade.
  • Mincing, crushing and chopping garlic and herbs will release more flavour and aroma.
  • The longer the meat marinates, the greater the flavour!

Ingredients

  • 1 cup ketchup
  • 3/4 cup chili sauce
  • 1/4 cup olive oil
  • 1/4 cup Dijon mustard
  • 1/4 cup lemon juice
  • 2 tbsp Worcestershire sauce
  • 2 tsp hot pepper sauce
  • 1 tsp red pepper flakes
  • 1/2 tsp freshly ground pepper
  • 3 cloves garlic, minced
  • 1 onion, minced

Instructions

  • Combine all ingredients; mix well, Makes 3 cups.

Ingredients

Ingredients

  • 1/2 cup light soy sauce
  • 1/3 cup Japanese cooking wine
  • 1/3 cup granulated sugar
  • 1 clove garlic, smashed and left whole
  • 1 piece fresh ginger root cut in half
  • 1 tbsp honey
  • 1/2 tsp Japanese wasabi paste (optional)

Instructions

  • In small saucepan, combine all ingredients; bring to boil and cook for about 3 minutes until syrupy. Remove from heat and discard the garlic and ginger. Let cool. Makes 1 1/2 cups.

  • 1 1/2 cups plain yogurt
  • 1/4 cup sunflower oil
  • 2 cloves garlic, minced
  • 1 tomatoes, peeled, seeded and finely chopped
  • 1 onion, minced
  • 2 tbsp chopped fresh coriander or parsley
  • 1 tbsp fresh ginger root, finely chopped
  • 2 tsp curry powder
