Caramelized Apple-Stuffed Pancakes

Caramelized Apple-Stuffed Pancakes is the most asked for breakfast meal when visiting my Mom on Vancouver Island. We all cheer when she serves up this light and airy pancake filled with loads of cinnamon-sugar caramelized apples.

I’m so thankful that my Mom shared this delicious hand-written recipe with me. Now I’m happy to share it with you.

Pancakes are one of those foods that we easily overlook, but they are ever-present, especially on weekends. Many people have a pancake preference; some like them thin, thick, fluffy or chewy. This is ours!

This recipe makes one large pancake baked in a skillet in the oven and then it’s cut into triangles like a pie. It’s best served with maple syrup, icing sugar or whipping cream.

This batter recipe is more like a crêpe than a pancake, with 4 eggs and having a thin consistency. This batter allows the pancake to be folded easily with the weight of the apples inside.

Pancakes

Ingredients needed:

  • 2 tbsp margarine or butter
  • 4 eggs
  • 2/3 cup all-purpose flour
  • 2/3 cup milk
  • 1 tbsp sugar
  • 1/2 tsp salt

Heat oven to 400 degrees F. Spoon butter into a heavy 10 inch skillet (oven proof) and place into oven.

Combine all ingredients in medium sized bowl. Beat until smooth. Pour batter into the prepared skillet.

Bake 20 to 25 minutes until fluffy and edges are deep brown. Do not peek for first 20 minutes.

Meanwhile, cook the filling.

Filling

  • 4 large firm apples
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • Dash of cinnamon and nutmeg

Peel and slice apples thin. Saute in butter. Add sugar, cinnamon and nutmeg. Cook until tender ~ about 15 minutes.

Remove pancake from oven and slide onto platter. Pour apples into the centre of the pancake. Fold pancake in half, then cut into triangles. Top with maple syrup, icing sugar or whipping cream.
