Christmas Marzipan Squares

This is my favourite Christmas square recipe! These tasty festive Christmas Marzipan Squares will be the highlight of any Holiday Dessert Tray.

And as per usual, I put my twist on this recipe. I doubled the recipe for the base, cake and icing and the result is cake-like squares that are so delicious I could eat them all day long! ย 

But I won’t. These squares freeze well, even iced, so they are going straight into a Christmas tin, then into the freezer to have on hand for the holiday season.

Yummy!

Tips For Making Christmas Marzipan Squares

  • There are 2 baking temperatures in this recipe. The Base is baked at 350 degrees F and the Cake is baked at 375 degrees F.
  • If the recipe is doubled, bake the Base a few minutes longer until light golden brown, but don’t overbake the Base or it will become hard and difficult to remove from the pan.
  • If you’re freezing the bars, place the bars in a single layer in the container. Or you can freeze the Cake part only, and frost when you’ve thawed out the squares to serve.

Ingredients

Base

  • 1 cup flour
  • 3 tbsp icing sugar
  • 1/2 cup margarine
  • raspberry jam

Cake

  • 1/2 cup soft butter
  • 2/3 cup white sugar
  • 2 eggs, well beaten
  • 1/2 tsp salt
  • 3/4 cup rice flour
  • 1 tsp almond extract
  • red & green food colouring

Butter Icing

  • 2 tbsp soft butter
  • 1 1/2 cups icing sugar
  • 2 tbsp milk
  • 1 tsp almond extract

Instructions

Base

  • Mix all base ingredients.
  • Pat into greased 9 inch square pan.
  • Bake at 350 degrees F for 10 minutes. Do not overbake.
  • Immediately spread with thin layer of raspberry jam.

Cake

  • Mix all cake ingredients together.
  • Divide into 2 equal portions.
  • Add drops of red food colouring to one portion and green to another.
  • Spread the first portion over the base, then the second portion.
  • Bake at 375 degrees F for 35 to 40 minutes.
  • Cool and ice with butter icing.

Butter Icing

  • Using an electric mixer, blend all butter icing ingredients.
  • Spread evenly over Christmas Marzipan Squares.
  • Chill to set, then cut into squares.
