Island Paradise Muffins

Island Paradise Muffins are perfect for a healthy breakfast or as a snack! I just love the delicious mix of island-inspired dried fruits and nuts, like cranberries, cherries, blueberries, golden raisins, blanched whole almonds, roasted kernel pistachios, walnuts and sliced coconut found in Bassé Paradise Mix. And it’s made right here in Canada!

Island Paradise Muffins offer a taste of the Caribbean! They are super easy to make and are so tender and moist. They’re freezer friendly too!

Here’s What You’ll Need

  • 2 cups oats
  • 2 cups milk
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups brown sugar
  • 2 eggs
  • 8 tbsp canola oil
  • 1 cup Bassé Paradise Mix, or other dried fruits & nuts

How to Make Island Paradise Muffins

  1. Preheat oven to 400 degrees F. Spray two 6-cup jumbo muffin pans with non-stick cooking spray, or line with muffin liners.
  2. Put oats and milk in a small bowl, allow to stand for 1/2 hour.
  3. Sift dry ingredients together, mix in brown sugar.
  4. Add eggs and oil to oat and milk mixture. Stir well.
  5. Mix dry mixture into wet mixture. Stir just to combine.
  6. Stir in 1 cup Bassé Paradise Mix, or other dried fruits & nuts.
  7. Spoon into greased muffin pans.
  8. Bake at 400 degrees F. for 15 to 20 minutes, or until a toothpick inserted in the centre comes out clean.
  9. Makes 1 dozen large muffins.
