Mandarin Orange Poppy Seed Cake

Tis the Season for mandarins, so lets bake a Mandarin Orange Poppy Seed Cake! This sweet and juicy seasonal fruit adds the perfect flavour boost to this traditional poppy seed cake recipe.

The cream cheese gives this cake a creamy and buttery texture and the mandarin orange juice adds a fresh citrus flavour. I found Chinese Mandarin Oranges on special at my local Save on Foods.

I love to serve this dessert in the afternoon with an orange or lemon herbal tea. And if you want to cut calories, you can use light cream cheese and low fat sour cream.

Here’s What You’ll Need

Cake

  • 2 eggs
  • 1 1/4 cups granulated sugar
  • 1/4 cup fresh mandarin orange juice
  • 1/4 cup vegetable oil
  • 1/4 cup cream cheese, softened
  • 1 tbsp grated mandarin orange rind
  • 1 tbsp poppy seeds
  • 1 2/3 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2/3 cup sour cream

Icing

  • 2 tbsp cream cheese, softened
  • 1/2 cup icing sugar
  • 1 tbsp fresh mandarin orange juice
  • poppy seeds, grated mandarin orange rind or mandarin orange pieces for garnish

How to Make Mandarin Orange Poppy Seed Cake

  1. Preheat oven to 350 degrees F. Spray a 9 x 5 inch or 5 x 12 inch loaf pan with cooking spray.
  2. For cake, using a stand mixer, beat eggs, sugar, orange juice, oil, cream cheese, orange rind and poppy seeds until smooth.
  3. In another bowl mix together the flour, baking powder and baking soda.
  4. Into the cream cheese mixture, alternately add the flour mixture and sour cream until well blended. Pour into prepared pan.
  5. Bake in the center of the oven for 45 to 50 minutes or until a knife or tooth pick inserted in the center of the cake comes out clean.
  6. Remove from the pan and cool completely on a wire rack.
  7. To make icing, using a stand mixer, beat all icing ingredients together. Spread over top of cake and garnish as desired.
