Mini Banana Bread Loaves

This recipe makes the tastiest moist banana bread, and it is so quick and easy to prepare. Making it with different ingredients that your family and friends love, makes it the perfect choice, and it’s sure to become one of your favourite recipes!

For making banana bread with a rich banana flavour, choose the ripest bananas. If I’m making a plain banana bread, I like to mash the bananas, leaving small banana chunks in the batter. For banana bread with added ingredients, like walnuts, chocolate chips and blueberries, I mash the bananas more thoroughly so the batter is smooth, allowing these added ingredients to stand out.

How to make Mini Banana Bread Loaves – Three Ways

  1. Using a blender mix together 1/4 cup buttermilk or sour milk, 2 eggs, 1 1/3 cups brown sugar, 1/2 teaspoon salt, 1 teaspoon vanilla and 1 cup of mashed bananas.
  2. While blender is running, gradually add 1/2 cup soft margarine. Blend until smooth. Add 1/2 cup of walnuts or chocolate chips or blueberries. Blend for 1 or 2 seconds.
  3. Sift together 2 cups flour and 1 teaspoon baking soda.
  4. Add flour mixture into blended mixture and beat batter until smooth and thoroughly mixed. Do not overbeat.
  5. Pour batter into greased and floured mini loaf pan.
  6. Bake for 40 to 50 minutes at 350 degrees or until the tops are golden brown and a knife inserted comes out clean.

Ingredients

  • 1/4 cup buttermilk or sour milk
  • 2 eggs

  • 1 tsp vanilla
  • 1 cup bananas, mashed
  • 1/2 cup margarine, soft
  • 1/2 cup walnuts, chocolate chips, blueberries (each)
  • 2 cups flour
  • 1 tsp baking soda

Instructions

  • Using a blender, mix together buttermilk, eggs, brown sugar, salt, vanilla and banana.
  • While the blender is running, gradually add margarine. Blend until smooth.
  • Add walnuts, or chocolate chips or blueberries and blend on low for 1 to 2 seconds.
  • Sift together flour and baking soda.
  • Pour flour mixture into blended mixture and beat batter until smooth and thoroughly mixed. Do not overbeat.
  • Pour batter into greased and floured mini loaf pan.
  • Bake at 350 degrees for 40 to 50 minutes, or until the tops are golden brown and a knife inserted comes out clean.
