Growing up, the best place to get Italian was at home. I remember the smell of sauces simmering in my mother’s kitchen all day, and was excited when she offered me a spoonful to test whether the sauce needed a little bit of this or a little bit of that. Today, I still have a hard time going out for an Italian dinner, as most meals I’ve tried just don’t compare to the flavour of traditional home-made recipes.

This simple and tasty recipe is rich with Italian herbs and spices and can be served over pasta or rice, with crusty bread. If you find rice or pasta too heavy, try spaghetti squash noodles. Simply bake prepared spaghetti squash in 400 degree oven for 30 minutes, let stand for 15 minutes, and using a fork, start at one end and scape the “noodles” out lengthwise. Voila!

How to make Mom’s Easy Chicken Cacciatore

  1. Heat olive oil in large Dutch Oven over medium heat.
  2. Cut up chicken into bite sized pieces. Add the chicken to pot and brown about 3 to 5 minutes.
  3. Crush garlic cloves and set aside. Slice zucchini into rounds. Cut onion, bell peppers and mushrooms into 1 inch pieces.
  4. Add garlic, onion, bell peppers zucchini and mushrooms to pot and cook until tender for about 5 to 7 minutes.
  5. Add the chicken broth, stewed tomatoes and herbs.
  6. Bring to boil and then simmer for 30 minutes to 1 hour.
  7. Enjoy over rice or pasta. Top with grated Parmesan or Mozzarella cheese, if desired.

Ingredients
  

  • 1 tbsp olive oil
  • 3 chicken breasts
  • 1 onion
  • 4 cloves garlic, crushed
  • 3 large bell peppers (red, yellow, orange)
  • 1/2 cup white mushrooms
  • 1/2 cup brown mushrooms
  • 2 small zucchini
  • 2 tsp fresh thyme leaves, chopped
  • 3 tbsp fresh parsley, chopped
  • 1 tsp fresh rosemary, chopped
  • 1/2 tsp crushed red pepper (optional)
  • 2 tsp dry Italian seasoning or oregano
  • 1/2 cup chicken broth
  • 540 ml Aylmer Accents Italian Seasonings stewed tomatoes
  • 540 ml Aylmer Accents Garlic & Olive Oil stewed tomatoes
  • 6 oz tomato paste
  • salt & pepper to taste
