Pasta with Green Beans and Ricotta Parmesan Sauce

Pasta is the quintessential fast food. It’s so simple, you can prepare this Pasta with Green Beans and Ricotta Parmesan Sauce in the time it takes to cook the pasta.

Pasta makes such an ideal everyday food because it’s so quick and easy and the range of homemade sauces is endless. In this d-e-l-i-c-i-o-u-s pasta dish, the Ricotta and Parmesan sauce is light compared to a traditional cream sauce, and the green beans are sweet and crunchy.

Instead of adding freshly crushed garlic to this pasta recipe, I used a garlic- infused olive oil. I first discovered infused olive oil when I visited 4 Oak Oil & Vinegar in Kamloops, an olive oil and balsamic vinegar tasting bar. You can taste everything before you buy. I tried so many!!! I was amazed at all the different flavours of olive oil. So ~ I’m hooked!

At Christmas time, I purchased a small set of infused olive oils and balsamic vinegars at HomeSense, and I used the garlic-infused olive oil in this recipe.

My family is obsessed with pasta! It’s one of our weekly go-to meals. And with Spring right around the corner, I’m thinking about preparing lighter meals. That’s why I love this recipe. It’s made with a light Ricotta and Parmesan sauce, rather than a cream sauce, and you can add vegetables that you have on hand.

For this recipe, I used Pappardelle, a durum wheat semolina pasta. I love the structure and texture of this pasta. You can choose any variety of pasta you like, but remember to cook it al dente!

Every night is a good night for pasta!

How to Make Pasta with Green Beans and Ricotta Parmesan Sauce

  1. Cook the pasta while preparing the sauce.
  2. Heat the olive oil in a frying pan, add the red onion and mushrooms and fry gently until just golden. Remove from the heat but leave in the pan and set aside.
  3. Blanch the green beans in a large pot of boiling salted water for a few minutes. Strain and run under cold water.
  4. Add the green beans to the red onion and mushrooms in a frying pan and re-heat on medium. Add salt and pepper to taste.
  5. Add the Ricotta, Parmesan cheese and basil to the freshly cooked pasta and mix until well coated. Stir in the green beans, red onion and mushroom mixture.
  6. Serve immediately garnished with freshly grated Parmesan cheese and crushed black pepper.

This Pasta with Green Beans and Ricotta Parmesan Sauce is easy to reheat so if you have any leftovers you can pack it up for a delicious hot lunch meal.

Ingredients
  

  • 5 tbsp olive oil (I used garlic infused)
  • 1/2 red onion, chopped
  • 6 large brown mushrooms, sliced
  • 1 cup fresh green beans, cut in half
  • 1 cup fresh ricotta
  • 1 1/4 cup freshly grated parmesan cheese (1/4 cup reserved for garnish)
  • 2 tbsp chopped fresh basil
  • sea salt and freshly ground pepper
  • freshly cooked pasta of your choice (I used Pappardelle)
