Peanut Butter Cheesecake Brownies

Peanut Butter and Chocolate are a match made in heaven! These Peanut Butter Cheesecake Brownies have a chocolate peanut butter cheesecake base, a peanut butter center and are topped with chocolate and peanut butter cup pieces.

This dessert takes my love of Reese’s Peanut Butter Cups to another level!

Yes, they take a little more time to prepare, but the result is s-o-o-o worthwhile!

How to Make Peanut Butter Cheesecake Brownies

  1. Preheat oven to 325 degrees F. Butter a 9 x 9-inch baking pan and line with parchment paper, pressing the parchment into the corners and up the side of the pan, leaving an overhang. Butter the parchment paper and dust lightly with flour.
  2. Melt the butter in a small saucepan over low heat. Add the chopped chocolate and cook, stirring constantly until melted. Remove from heat. Cool for 10 minutes, then whisk in the eggs, water and vanilla. Set aside.
  3. In a large bowl, add the sugar, flour, cocoa powder, baking soda, baking powder and salt. Whisk to blend. Add the dry ingredients to the melted chocolate mixture; with a rubber spatula, fold to combine. Set aside.
  4. For the cheesecake, in a medium-sized bowl, beat cream cheese for a couple minutes until smooth. Add in the peanut butter, sugar, egg, flour and vanilla extract and stir until combined.
  5. Spoon the brownie and cheesecake batter alternatively in the pan. Use a knife to swirl the batters together to create a marbled effect.
  6. Bake in preheated oven for 35 to 40 minutes or until a toothpick inserted near the middle comes out clean. Cool.
  7. For the peanut butter filling, using a mixer, blend the butter, peanut butter, icing sugar, milk and vanilla until smooth.
  8. Spoon dollops of the peanut butter filling over the brownie and pat down with a spoon until even. Place in refrigerator.
  9. For the chocolate topping, place chocolate chips and butter in a small bowl and microwave for 30 seconds. Stir until smooth and cool for about 3 minutes. Spread over the brownies.
  10. Place in the refrigerator for 5 minutes, then top with pieces of Reese’s Peanut Butter Cups. Chill before cutting into pieces.

Ingredients

Brownies

  • 1/2 cup butter or margarine
  • 2 ounces semisweet chocolate, chopped
  • 2 large eggs
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 3/4 cup all-purpose flour, plus 1 tbsp for dusting pan
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Peanut Butter Cheesecake

  • 8 oz cream cheese, softened
  • 3/4 cup peanut butter
  • 1/2 cup sugar
  • 1 egg
  • 1 tbsp flour
  • 1/2 tsp vanilla extract

Peanut Butter Filling

  • 1/4 cup butter or margarine
  • 1/2 cup peanut butter
  • 1 cup icing sugar
  • 1/4 cup milk
  • 1 tsp vanilla

Chocolate Topping

  • 1 cup semi-sweeet chocolate chips
  • 5 tbsp butter
  • 6 Reese's Peanut Butter Cups, cut in pieces
