Shrimp Quiche

Served with a crisp salad, this Shrimp Quiche is a substantial main dish! Filled with shrimp, caramelized red onion, tomato, oregano and fresh dill, this quiche has a delicious Italian twist.

This quiche recipe is great baked in a 9-inch pastry shell, individual quiches or baked in a pastry-lined 8-inch square cake pan, then cut into squares as an appetizer.

How to Make Shrimp Quiche

  1. In a skillet, melt butter and cook red onion until tender. Pour in the wine and bring to boil. Add shrimp and cook for 1 to 2 minutes. Season with salt and pepper to taste.
  2. Whisk together eggs, cream, tomatoes, oregano and dill.
  3. Spoon shrimp mixture into quiche shell. Pour in egg mixture.
  4. Bake in 375 F. oven for 25 to 35 minutes or until set.

You can use cooked or raw shrimp in this recipe. If using fresh raw shrimp peel & devein the shrimp.

I love to serve this Shrimp Quiche when my friends come over for lunch. It is perfect to pair with a crisp green salad and glass of white wine or sparkling water. You can use a frozen pie crust, but a homemade pie crust is always my first choice. I use a prebaked Crisco No Fail Pie Crust.

What’s great about quiche is it’s a great way to use up random bits of vegetables, herbs, and meats. So you can add a little bit of this or that to this recipe. If you love cheese, you can sprinkle a 1/2 cup of shredded cheese over the top! I recommend Gruyere cheese.

You can also easily double this recipe and freeze one for another day.

  • 1 prebaked 9-inch pie crust
  • 2 tbsp butter
  • 1/2 red onion, chopped small
  • 3 tbsp white wine
  • 1/2 lb small shrimp, deveined (raw or cooked)
  • 3 large eggs
  • 1 cup whipping cream
  • 1/2 cup Roma tomatoes, chopped small
  • 1/2 tsp dried oregano
  • 1 tbsp finely chopped fresh dill
  • salt & pepper to taste
